“Life is a combination of magic and pasta.” There’s nothing like hosting friends and family at your home for a simply delicious pasta dinner. That’s just what I did last week after an inspirational dining at experience at Eataly!

I was recently invited to dine at La Pizza & La Pasta in Eataly Chicago to experience some authentic Italian pasta. Let me tell you, I definitely felt the magic when that bowl of Lo Spaghetto al Pomodoro that arrived at my table! Eataly’s authentic Italian dishes always hit the spot when I’m craving a big bowl of pasta, and this time was no exception. The highlight of my night was when that first noodle twirl went in my mouth. It was so simply delicious! I couldn’t wait to try and recreate this magical authentic Italian dish in my home for some good friends!
Where can I get this dish at Eataly?
Eataly Chicago introduced their new dish, Lo Spaghetto al Pomodoro, in their La Pizza & La Pasta restaurant. It was mastered by their executive chef in Italy, Enrico Panero, by finding 5 authentic, simple Italian ingredients and creating the perfect pasta recipe. I’ve always been a huge fan of simple pasta dishes from a young age. By just using a few good quality ingredients, it allows each ingredient to shine, and doesn’t make you feel so heavy when you leave the dining table.
If you’ve been following me for a while, you know that I worked at an Italian restaurant right out of culinary school. It was one of the best times of my life, and I remember it fondly. My favorite dish to make (and eat) at the restaurant was a Gnocchi Pomodoro. I loved how simple the ingredients were and how easy it was to make! This dish from Eataly brought back all those wonderful memories I had of working in an Italian kitchen.
When I returned home after dining at Eataly, I knew I wanted to recreate this delicious authentic Italian pasta dish for my friends. I immediately called two couples Allison and I are close with and invited them over. Unlike most dinner parties I host, I wasn’t even stressed because I knew that this incredibly mouthwatering dish only took just a few ingredients to execute! I knew I could just pair it with some crusty Italian bread and a simple salad and the evening would be perfect.
What should I serve with Spaghetto al Pomodoro?
I prepared a classic heirloom tomato caprese salad, cut up some crusty italian bread and got the pasta cooking! Check out how simple it was to make below!
What do you need to make Spaghetto al Pomodoro?
1 (17.6-ounce) package of Spaghetti di Gragnano IGP Carta Paglia by Afeltra
2 12 oz Jars of Cosi Come Whole Red Datterino Tomatoes
1/4 cup ROI Monocultivar Taggiasca Extra Virgin
Olive Oil, plus more for serving
1 1/2 teaspoons Sicilian Sale Integrale Sea Salt by Il Mercante di Spezie
3 to 4 sprigs fresh basil
Kosher salt, for cooking the pasta

No fancy serving dishes required! I just let my friends serve themselves from my saute pan!

Eataly’s Spaghetto al Pomodoro

Ingredients
1 (17.6-ounce) package of Spaghetti di Gragnano IGP Carta Paglia by Afeltra
2 12 oz Jars of Whole Red Datterino Tomatoes1/4 cup ROI Monocultivar Taggiasca Extra Virgin
Olive Oil, plus more for serving
1 1/2 teaspoons Sicilian Sale Integrale Sea Salt by Il Mercante di Spezie
3 to 4 sprigs fresh basil
Kosher salt, for cooking the pasta

Instructions
Boil a pot of water for the pasta
Cook spaghetti for 8-10 minutes
While the spaghetti is cooking, simmer crushed tomatoes and olive oil and add salt to taste
Reserve 1/2 cup of pasta water and drain pasta when al dente. Add pasta to sauce and add pasta water. Cook until the sauce has thickened slightly. Add fresh basil and toss to combine.
Plate and serve with fresh basil to garnish
