Air Fried Red Potatoes with Truffle Aioli

Potatoes have a high Glycemic Index, so generally, they’re not considered healthy.  The Glycemic Index is a ranking of carbohydrates in foods according to how they affect blood glucose levels. Carbohydrates with a low Glycemic Index value are digested slower,  and therefore cause a lower and slower rise in blood glucose and insulin levels. Red potatoes are also considered waxy potatoes, and have a lower glycemic index than starchy potatoes, like Russet and Idaho potatoes.  They also contain fewer calories, carbs, and fiber than Russet potatoes.

Are air fried red potatoes healthy?

Air-fried foods are known to be a healthy alternative to deep-fried foods. Air fryers use a circulation of hot air to cook food that would otherwise be deep-fried in oil. The fan in an air fryer is used to circulate hot air around the food and cooks it more evenly and efficiently. Because less oil is needed to produce the same taste and texture, it results in a food that has less fat and calories!

Should I remove the skin from red potatoes before air frying

The skin of red potatoes are actually are a good source of many vitamins and minerals!  They have a good amount of potassium and vitamin C!  So keep the skin on these air fried red potatoes!   Just make sure you scrub any dirt off and remove any eyes or sprouts before putting in the air fryer.

How do I make truffle aioli?

Since we’re not making our own mayo from scratch, this truffle aioli is so easy! Simply whisk  the following ingredients in a bowl:

Sour cream

Mayonnaise

Black truffle oil

Minced garlic

Salt and pepper

Lemon juice

Paprika

That’s it!!  This makes a decadent dipping sauce for your air fried red potatoes.

Air Fried Red Potatoes

Ingredients

Scale
  • 2 cups 1″ diced red potatoes
  • 1/2 tsp olive oil, extra virgin
  • 1/2 tbsp onion salt
  • 1/2 tsp paprika
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder

For the truffle aioli: 

  • 1/2 cup Sour cream
  • 1/2 cup mayonnaise
  • 2 tbl Black truffle oil
  • 1 tbl Minced garlic
  • Salt and pepper to taste
  • 1 tsp Lemon juice
  • 1/2 tsp Paprika

Combine in a small bowl and whisk to incorporate.  Serve alongside potatoes. 


Instructions

  1. Toss your diced potatoes in a large bowl with olive oil. Season with onion salt, pepper, paprika, and garlic powder.
  2. Toss to ensure that each piece is evenly coated. Place them in the air fryer at 400 degrees for 10 minutes.  Shake the basket and stir potatoes.
  3. Replace the basket and cook for another 8-10 minutes at 400.
  4. Serve with truffle aioli.
