Are you going stir crazy yet?? We’ve been stuck in quarantine now for what feels like 476 days. At first, I was losing my mind a bit, but I’ve developed a routine, and in the last week or so have been quite productive!! On a positive note, quarantine 2020 has allowed me to experiment with lots of new ingredients. I’m trying to come up with new recipes that use shelf-stable ingredients, and pantry staples. Potatoes are just one of those shelf-stable ingredients!! If stored properly, red potatoes keep well 2 to 3 weeks in the pantry and 2 to 3 months in the fridge!

How do I make truffle aioli?
Since we’re not making our own mayo from scratch, this truffle aioli is so easy! Simply whisk the following ingredients in a bowl:
Sour cream
Mayonnaise
Black truffle oil
Minced garlic
Salt and pepper
Lemon juice
Paprika
Air Fried Red Potatoes
- Prep Time: 5 minutes
- Cook Time: 18 minutes
- Total Time: 23 minutes
- Yield: 4 1x
Ingredients
- 2 cups 1″ diced red potatoes
- 1/2 tsp olive oil, extra virgin
- 1/2 tbsp onion salt
- 1/2 tsp paprika
- 1/4 tsp pepper
- 1/2 tsp garlic powder
For the truffle aioli:
- 1/2 cup Sour cream
- 1/2 cup mayonnaise
- 2 tbl Black truffle oil
- 1 tbl Minced garlic
- Salt and pepper to taste
- 1 tsp Lemon juice
- 1/2 tsp Paprika
Combine in a small bowl and whisk to incorporate. Serve alongside potatoes.
Instructions

Toss your diced potatoes in a large bowl with olive oil. Season with onion salt, pepper, paprika, and garlic powder.

Toss to ensure that each piece is evenly coated. Place them in the air fryer at 400 degrees for 10 minutes. Shake the basket and stir potatoes.
- Replace the basket and cook for another 8-10 minutes at 400.
- Serve with truffle aioli.
