Try air fryer cubed potatoes for a crispy, fluffy side dish paired with delicious truffle aioli. Comfort food made easy.

There’s something so comforting about crispy potatoes — especially when they’re done in the air fryer and paired with a luxurious truffle aioli. Growing up, roasted potatoes were always a Sunday dinner staple in our house. My mom would toss them with just the right amount of seasoning, and I remember standing by the oven, impatiently waiting for them to crisp up. These days, my air fryer does all the work, giving me that same nostalgic flavor in half the time — and that irresistible crunch!

When I first started experimenting with air fryer recipes, I was amazed at how quickly it turned basic ingredients into something extraordinary. The first time I made these potatoes for friends during a casual dinner party, they disappeared before the main course even hit the table! The truffle aioli was such a hit that I now keep a jar in the fridge — it’s delicious on sandwiches, fries, or even grilled veggies.

Key Ingredients for Crispy Air Fryer Potatoes

Cubed red potatoes tossed with olive oil and seasonings in a white mixing bowl, ready to be cooked into crispy air fryer cubed potatoes.

For the Potatoes:

  • 2 cups 1″ diced red potatoes: Red potatoes are perfect for air frying because their waxy texture holds up beautifully, giving you tender bites with crisp edges. Cutting them into uniform cubes ensures even cooking.
  • 1/2 tsp extra virgin olive oil: A small amount goes a long way — it helps the seasonings stick and encourages that golden-brown crispness.
  • 1/2 tbsp onion salt: This brings a subtle savory flavor that elevates the potatoes without overpowering them.
  • 1/2 tsp paprika: Adds a hint of smokiness and gives the potatoes a lovely golden hue.
  • 1/4 tsp pepper: For a touch of heat and balance.
  • 1/2 tsp garlic powder: Garlic brings warmth and depth, perfectly complementing the onion salt and paprika.
  • Fresh herbs: like fresh parsley is optional, for garnish

For the Truffle Aioli:

  • 1/2 cup sour cream: This gives the aioli a cool, creamy texture with a little tang that balances the richness of truffle oil.
  • 1/2 cup mayonnaise: The classic base for aioli — it’s smooth, rich, and helps the flavors meld beautifully.
  • 2 tbsp black truffle oil: The star of the show! Truffle oil adds an earthy, luxurious aroma that makes this dip taste restaurant-worthy.
  • 1 tbsp minced garlic: Because garlic makes everything better — it adds depth and a savory punch.
  • Salt and pepper to taste: Simple seasonings to enhance and balance the flavors.
  • 1 tsp lemon juice: A touch of acidity brightens the aioli and cuts through the richness.
  • 1/2 tsp paprika: Ties it all together with a smoky note and a pop of color.

How to Make Air Fryer Diced Potatoes

  1. Preheat your air fryer to 400°F. Preheating ensures the potatoes start crisping the moment they hit the basket.
  2. Toss the potatoes in a large bowl with olive oil, onion salt, paprika, pepper, and garlic powder. Mix well to coat evenly.
  3. Place the potatoes in the basket of your air fryer in a single layer. Don’t overcrowd — this helps each cube crisp up evenly.
  4. Air fry for 20 minutes, shaking the basket halfway through. The potatoes should be golden brown and fork-tender.
  5. While the potatoes cook, make the truffle aioli. In a small bowl, combine sour cream, mayonnaise, truffle oil, garlic, lemon juice, paprika, salt, and pepper. Whisk until smooth and creamy.
  6. Serve immediately! I love drizzling a bit of aioli over the warm potatoes and keeping the rest for dipping.
