What is bruschetta?
Traditionally an appetizer Originating in Italy, this classic is made up of fresh tomatoes, basil, garlic and olive oil. It’s usually served as a snack or starter to a meal, with a side of toasted bread, but today we’re adding it to spaghetti noodles with a delicious cream sauce for a great weeknight meal!
How do I make Creamy Chicken Bruschetta Pasta?
For this quick dish, we’re going to start with making a simple bruschetta mix. You want to mix the tomatoes together first so that the flavors can begin to marinate and develop, as to give your pasta as much flavor as possible! Do this by combining the following in a small bowl:
1 pint ripe grape tomatoes, sliced in half
5 large basil leaves, chiffonade, plus some for garnish
2 small cloves of garlic, minced or pressed through a garlic press
salt and pepper to taste
1/2 tsp sugar
1 tbl olive oil
Let it sit for 10 minutes while you fill a medium stockpot with water for the pasta. Let it come to a boil over medium heat.
In a large saute pan, melt 1 tablespoon of butter over medium heat. Add 1 clove of minced garlic and saute until fragrant. Add one tablespoon of flour and create a roux, or a mixture of butter and flour used in making sauces. Let the flour cook for 1 minute before adding wine and cream.
Add parmesan cheese and whisk to fully incorporate before adding the bruschetta tomatoes.
Before draining the pasta, reserve a 1/2 cup of pasta water.

Ingredients
For the bruschetta tomatoes
- 2 ripe tomatoes on the vine, chopped and seeded
- 5 large basil leaves, chiffonade, plus some for garnish
- 2 small cloves of garlic, minced or pressed through a garlic press
- salt and pepper to taste
- 1/2 tsp sugar
- 1 tbl olive oil
For the pasta:
- 1 cup Tyson’s Grilled & Ready
- 1 tbl butter
- 1 tbl flour
- 8 oz heavy cream
- 1/2 cup pasta water
- 1 clove garlic
- 1/4 cup grated parmesan cheese
- 1/2 cup white wine
- 1 lb spaghetti
Instructions
Combine the ingredients for the bruschetta tomatoes in a small bowl and set aside.
Fill a medium stockpot with water for the pasta. Let it come to a boil over medium heat. Add pasta and cook for 8-10 minutes or until al dente. Before draining, reserve 1/2 cup pasta water and set aside.
In a large saute pan, melt 1 tablespoon of butter over medium heat. Add 1 clove of minced garlic and saute until fragrant. Add one tablespoon of flour and create a roux, or a mixture of butter and flour used in making sauces. Let the flour cook for 1 minute before adding wine and cream.
Add parmesan cheese and whisk to fully incorporate before adding the bruschetta tomatoes.
Add drained pasta and toss to combine. Garnish with fresh basil and additional parmesan before serving.
