Persimmon Salad Ingredients
- 4 ounces of green butter lettuce or baby spinach, chopped
- 4 ounces of red leaf lettuce or mixed greens, chopped
- 2 persimmons, sliced
- 1/2 cup roasted sweet potato
- 4 ounces crumbled goat cheese
- 1/4 cup dried cranberries
- 2 tablespoons pepitas
- 1 pink lady apple, sliced thin
- 1 tablespoon whole-grain Dijon mustard
- 2 tablespoons maple syrup
- 1/4 cup extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
How To Make Persimmon Salad
Step 1. Frst, cut sweet potato into 1/2″ pieces, toss with olive oil and salt and pepper, and roast on a baking sheet at 400 for 20 minutes
Step 2. Next remove from the sweet potato from the oven and let cool slightly
Step 3. Make the dressing by whisking together apple cier vinegar, maple syrup, mustard, olive oil, salt and black pepper in a small bowl
Step 4. After that, slice stem ends off of persimmons and slice the rest of the berry into 1/4″ slices
Step 4. Toss greens, goat cheese, pepitas, and cranberries in a large serving bowl.
Step 5. Next, place slices of persimmon and apples on top.
Step 6. Finally, drizzle with dressing and serve.

2 persimmons, sliced
