What Type of Persimmons should I buy?
Persimmons is an edible berry that grows on a variety of trees in the genus Diospyros. Persimmon fruit matures late in the fall and can stay on the tree until winter months. The two main types of persimmons you’ll find in the grocery store in the United States are the fuyu and hachiya persimmons. There are Persimmons can be eaten fresh or they can be dried, and persimmon salad recipes are very popular. Most persimmons have a red color when ripe on the outside but all persimmons will eventually turn from green to orange as they get more mature. They look like tomatoes before ripening on the inside with large seeds in them. Fuyu persimmons are best for salads!

When you slice it this way, you’ll see the beautiful star shape in the middle of the slice. At this point, I like to slice it in half again, but you may leave it whole for beautiful presentation.

Lettuce
For this fresh persimmons salad recipe, I used a combination of green butter lettuce, baby spinach and red leaf lettuce. You may choose whichever combination of greens you like.
Fresh Persimmons
When choosing persimmons at the grocery store, pick ones that are bright orange without too much black staining. A little bit of black staining is fine, but don’t pick one that has large dark black spots – the black will be on the inside as well. These are fine to eat, but don’t present well. To get the best flavor from your persimmons, leave them at room temperature for 5 days before eating.
Sweet potato
The sweet potato is cubed and roasted at 400 degrees for 15 minutes prior to adding to this salad
Goat Cheese
The mild, earthy, buttery but tart flavor adds a beautiful layer to this salad and a pop of white color!
Dried Cranberries
Dried cranberries add vitamin C, E and K and a chewy, tart element to the bowl! These can usually be found in the dried fruit aisle or the produce section of your grocery store.
Pepitas
This little superfood packs heart-healthy fats and 9 grams of protein while adding a lovely crunch to this fresh persimmons salad.
Apple
Apples add a deliciously juicy component to any salad! Choose a nice crunchy apple that doesn’t brown too quickly when sliced or chopped, such as Honeycrisp, Fuji, Pink Lady, Piñata®, Jazz, or Envy. Slice them thin and place them in groups of 2 or 3 in fan shape for a beautiful presentation.

1 tablespoon whole-grain Dijon mustard
2 tablespoons maple syrup
1/4 cup extra virgin olive oil
2 tablespoons apple cider vinegar
1/2 tsp salt
1/4 tsp freshly ground black pepper
Step by Step Instructions to make this Fresh Persimmions Salad recipe
Step 1. First, cut sweet potato into 1/2″ pieces, toss with olive oil and salt and pepper, and roast on a baking sheet at 400 for 20 minutes
Step 2. Next remove from the sweet potato from the oven and let cool slightly
Step 3. Make the dressing by whisking together apple cier vinegar, maple syrup, mustard, olive oil, salt and black pepper in a small bowl
Step 4. After that, slice stem ends off of persimmons and slice the rest of the berry into 1/4″ slices
Step 4. Toss greens, goat cheese, pepitas, and cranberries in a large serving bowl.
Step 5. Next, place slices of persimmon and apples on top.
Step 6. Finally, drizzle with dressing and serve.

2 persimmons, sliced
1/2 cup roasted sweet potato
4 ounces crumbled goat cheese
1/4 cup dried cranberries
2 tablespoons pepitas
1 pink lady apple, sliced thin
For the dressing
1 tablespoon whole grain dijon mustard
2 tablespoons maple syrup
1/4 cup extra virgin olive oil
2 tablespoons apple cider vinegar
1/2 tsp salt
1/4 tsp freshly ground black pepper
Instructions
Cut sweet potato into 1/2″ pieces and roast at 400 for 20 minutes -. Remove from oven and let cool slightly
Make dressing by whisking together ingredients in a small bowl
Toss greens, goat cheese, pepitas, and cranberries in a large serving bowl. Place sliced apples and persimmons on top. Drizzle with dressing and serve.
