Heart Shaped Waffle Ice Cream Sandwiches

Combining breakfast and dessert to make a sweet treat for your Valentine! These heart shaped waffle ice-cream sandwiches are a frosty snack any one will love!

We are big ice cream fans here at the Windy City Dinner Fairy house.  At any time during the year (nope, it doesn’t just apply to those summer months) we have at least  4 pints of ice cream at our house.  I’ve been wanting to make waffle ice cream sandwiches since I saw them over 5 years ago while I was at Coachella.  It was the perfect frosty treat at a hot summer festival and oh so Instagrammable!  Today I’m partnering with Solo Cup to show you how easy these are to make with the whole family!

When I registered for a heart shaped waffle maker for our Valentine’s Day wedding, I didn’t have these in mind, but now I’m so glad it was on my list!  I couldn’t resist making these romantic chocolate covered waffle ice cream sandwiches for my sweetheart on our anniversary. 

Waffle Ice Cream Sandwiches

Not only are these heart shaped waffle ice cream sandwiches SO easy to make, they’re fun for kids, too! I put my each of my different heart sprinkle toppings in Solo’s 9 oz clear plastic cups.   After the sandwiches are dipped in chocolate, the kids can pick their choice of heart shaped sprinkles to customize each individual ice cream sandwich. 

How do you make the waffle ice cream sandwiches?

You can use store-bought or homemade waffles for this recipe. I found that homemade waffles work best if you freeze them for at least an hour before using them. This helps to slow the melting of the ice cream.

Let your ice cream soften a bit, and using a medium cookie scoop with release, scoop out one spoonful of ice cream, place on the bottom waffle, and using another waffle, press the ice cream down until it’s about 3/4 – 1″ thick.  If the ice cream is coming out the sides, scrape off the excess with a knife or spatula.

Once all of your waffle ice cream sandwiches are filled, place them back in the freezer for at least an hour to set.

About 10 minutes before the hour is up, make the ganache for dipping!

How do I make ganache?

What you need:

16 oz good quality chocolate chips

1 cup heavy cream

Put the chocolate chips in a heat safe bowl and set aside.

In a small sauce pan on the stove, heat the cream over medium heat until it’s just about to boil.

Turn off the heat and pour cream over the chocolate chips.  Without stirring, let the cream and chocolate sit for 5 minutes.

When 5 minutes is up, using a whisk or spatula, start stirring in a circular motion in the middle of bowl.  Keep this going until all the chocolate and cream has combined and there are no lumps.

Waffle Ice Cream Sandwiches

Set up the sprinkle station before removing the waffle ice cream sandwiches from the freezer.  My favorite heart shaped sprinkles are here and here and here.   Quickly dip each sandwich in the ganache and then place on Solo’s 10″ paper plates.  Sprinkle with heart sprinkles of your choice, and set in the freezer again for another 10 minutes.
