Ingredients

  • 1 cup all purpose flour

  • 1/2 cup dutch process cocoa

  • 1 teaspoon baking soda

  • 1 teaspoon kosher salt

  • 3 large brown bananas   (1 ½ cups mashed)

  • 1/2 cup apple sauce 

  • 3/4 cup packed light brown sugar

  • 1 large egg, room temperature

  • 1 tablespoon vanilla extract

  • ¾ cup semisweet chocolate chips, divided 

 

 


Instructions

  1. Start by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it to ensure the muffins do not stick. 
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. 
  3. In a separate, larger bowl, mix the mashed bananas with the sugar, melted butter, egg, and vanilla extract. The bananas should be mashed well, but a few small lumps are fine.
  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined. 
  5. Fold in the chocolate chips, reserving a handful to sprinkle on top of the muffins before baking.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full. Sprinkle the reserved chocolate chips on top.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
