Healthy Buffalo Chicken Wraps

1/2 cup of Franks Hot Sauce 

1 tbl butter

1 cup shredded buffalo chicken or 1 lb breaded chicken strips

4 Spinach Wraps

1 cup shredded kale 

1/2 shredded red cabbage 

1/4 cup tbl shredded carrots

1 oz. blue cheese crumbles 

Healthy blue cheese dressing

1/21 cup crumbled blue cheese

1/4 cup buttermilk

3/4 cup non-fat plain greek yogurt

1 tablespoon white vinegar

2 teaspoons garlic powder

1/4 tsp salt


Instructions

  1. Make the buffalo sauce by combining 1/2 cup of Franks Hot Sauce and 1 tbl butter in a sauce pan. Heat until the butter is melted and stir to combine. Set aside.
  2. Using either leftover shredded rotisserie chicken or your favorite breaded chicken fingers, toss with buffalo sauce until fully coated.
  3. Lay out a Wrap and layer 1/4 cup shredded kale and two buffalo chicken strips or 1/4 cup shredded buffalo chicken, top with 2 tbl shredded red cabbage and 1 tbl shredded carrots.
  4. Sprinkle a tablespoon of blue cheese crumbles and wrap!
  5. Dip in homemade healthy blue cheese dressing!
