What do you need to make buffalo chicken wraps?
Chicken
I used some store bought frozen breaded chicken strips for these healthy buffalo chicken wraps, but you’re welcome to use grilled chicken breasts, shredded grilled chicken, or rotisserie chicken if you don’t want to use breaded chicken.
Homemade buffalo sauce
Homemade buffalo sauce takes minutes to put together and has just two ingredients! Franks Red Hot Sauce and butter!
Chopped kale
Kale is a leafy green that’s loaded with nutrients! It has tons of vitamins A, K, B6 and C, calcium, and potassium! One cup of raw kale has just 33 calories and only 7 grams of carbohydrate. So, it’s a very diabetes-friendly/weight-friendly vegetable. Make sure you massage or rub the kale leaves together between your fingers, until they just start to wilt. You want to massage the leaves to the point where the kale feels crispy rather than rubbery.
Shredded purple cabbage
Not only does this add a gorgeous purple pop of color to these healthy buffalo chicken wraps, but purple cabbage is thought to lower inflammation and protect against certain types of cancers.
Shredded carrots
you can grab store bought or shred your own at home!
Soft flour tortilla
I like to use spinach wraps for some extra nutrients, but any burrito sized soft flour tortillas would work!
How to make buffalo chicken wraps:
- Start by making the buffalo sauce by combining 1/2 cup of Franks Red Hot Sauce and 1 tablespoon of butter in a saucepan. Heat until the butter is melted and stir to combine. Set aside.
- Using either leftover shredded rotisserie chicken or your favorite breaded chicken fingers, toss with buffalo sauce until fully coated.
- Lay out a wrap and layer 1/4 cup shredded kale and two buffalo chicken strips or 1/4 cup shredded buffalo chicken.
- Top with two tablespoons of shredded red cabbage and one tablespoon of shredded carrots.
- Sprinkle a tablespoon of blue cheese crumbles and wrap!

Healthy Buffalo Chicken Wraps
1/2 cup of Franks Hot Sauce
1 tbl butter
1 cup shredded buffalo chicken or 1 lb breaded chicken strips
4 Spinach Wraps
1 cup shredded kale
1/2 shredded red cabbage
1/4 cup tbl shredded carrots
1 oz. blue cheese crumbles
Healthy blue cheese dressing
1/2 – 1 cup crumbled blue cheese
1/4 cup buttermilk
3/4 cup non-fat plain greek yogurt
1 tablespoon white vinegar
2 teaspoons garlic powder
1/4 tsp salt
Instructions
- Make the buffalo sauce by combining 1/2 cup of Franks Hot Sauce and 1 tbl butter in a sauce pan. Heat until the butter is melted and stir to combine. Set aside.
