Kale & Pear Salad

Windy City dinner fairy

1. Remove stems, slice kale, and massage kale

2. Cook bacon until crispy and chop into crumbles 

3. Combine bacon fat, olive oil, red wine vinegar, sugar, dijon mustard and salt and pepper

4. Garnish & Serve!

Why do you massage kale?

When you massage the kale, it helps soften it up, and also release a bunch of bitter compounds that don’t taste all that great. It also makes it easier to digest!
