Happy first day of summer! Let’s raise a glass to a fun filled summer with these watermelon mojito coolers! The perfect frosty cocktail to cool off your hot summer days.
It was raining all day here in Chicago, but that didn’t stop me from pretending it was sunny and 80 inside! I have been craving watermelon ever since making my watermelon arugula salad with feta, so I picked up another one from the market and cut it up right as I got home.
Allison and I are headed up to Michigan this weekend for a nice break. She’s finally done with school and since I don’t have a corporate job, I don’t feel bad about taking off work! I used to have serious guilt taking any sort of vacation time. Crazy, right?
But now that I’m my own boss, I can finally relax and enjoy time off.
I am always thinking about what food and drinks we can make up at the lake. My in-laws will be there and they LOVE a good cocktail. They’re both retired and when they’re on vacation, they are so much fun! So I knew these watermelon mojito coolers would be perfect for up north!
After making these, I seriously contemplated if I could live solely off of watermelon for the next three months. They’re so juicy and delicious, I thought, what more could I need?!?
Then I got hungry, and made some tacos.
But for about 10 minutes, I had convinced myself that all I needed was watermelon.
Before devouring the entire thing, I whipped up these mouth watering watermelon mojito coolers. Let me tell you, I’m so glad I did! I have a small herb garden on my back patio. The mint is almost taking over the entire thing, so I threw in extra mint in these cocktails.
These are cool, refreshing, easy to make, and so darn delicious. They are perfect for your next summer barbecue with family and friends!!

Watermelon Mojito Coolers
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 3 drinks 1x
Ingredients
4–5 cups seeded watermelon, chilled
1 lime, juiced
5-6 sprigs of mint
¼ cup simple syrup
1.5 oz light rum
Ice cubes
Instructions
- Combine all the ingredients except the ice cubes in a blender and blend until watermelons are smooth.
- Add the ice cubes and blend until combined.
- Serve over ice in glasses. Garnish with mint.
