Ingredients
Store bough pizza dough or homemade
For the Peanut Sauce:
1 cup peanut butter ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tablespoons Soy sauce⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 tablespoon Sriracha⠀⠀⠀⠀⠀⠀
4 tablespoons rice wine vinegar⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 tablespoons brown sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀
6 cloves garlic, minced⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 tablespoons grated fresh ginger
1/2 cup water
For the pizza toppings:
1/2 pound shredded rotisserie chicken
1 bell pepper, cut julienne
1 scallion, sliced
Handful of basil, chopped
Handful of cilantro, chopped
1 carrot, shredded
1 cup of shredded mozzarella cheese
Instructions
To make Peanut Sauce, combine all sauce ingredients in a blender and blend until smooth.
Place chicken in a bowl and toss with half of the peanut sauce.
Shape dough into a round.
Coat a pizza peel lightly with cornmeal and place pizza dough round on top. Spread 1/4 cup of sauce evenly on dough.
Cover sauce with 3/4 cup mozzarella cheese.
Place half the chicken on top of the cheese followed by half the green onions, and carrots
Top with 1/4 cup mozzarella .
Transfer pizza to pizza stone and bake 8 to 10 minutes, until crust is golden.
Sprinkle with cilantro, basil and remaining green onions and serve.
