Taco Frittata

6 eggs

1/2 cup FUD Crema

2/3 cup of FUD Cotija cheese

1/4 cup cilantro 

1/4 cup red onion, diced

1 red bell pepper, diced

12 tablespoons mild green chiles


Instructions

Preheat oven to 400 degrees F

In a medium bowl, whisk eggs and FUD crema until combined.  Add taco seasoning cotija cheese and green chiles and whisk to combine. 

In a saute pan over medium heat, add red onion and diced bell peppers, sautéing until peppers begin to just soften (about 3-4 minutes)

Add peppers and onions to eggs and stir to combine.  

Spray baking dish with cooking spray or avocado oil.

Bake frittata at 400 for 15 minutes until eggs are set (check eggs using a fork. It may look slightly runny but the fork should come out clean)
