Description

Make your summer BBQ complete with Smoky Summer Slaw, a crunchy and creamy side dish full of flavor and spice.


Ingredients

For the Slaw

14 oz. bag coleslaw mix

1 cup Red Cabbage, shredded

1/2 c. red pepper diced

1 15 can black beans rinsed and drained

1/2 c. grilled corn

1/2 c. minced cilantro

1 jalapeno seeds removed and finely diced

For the Dressing:

1/2 cup mayo

1 tbl lime juice

1 tablespoon water

1/2 teaspoon chili powder

1 teaspoon smoked paprika

1/4 teaspoon ground chipotle powder


Instructions

In a large bowl, add the coleslaw mix, shredded cabbage, red bell pepper, black beans, grilled corn, cilantro, and jalapeño. Toss everything together until well mixed.

Make the smoky dressing

In a small bowl, whisk together mayo, lime juice, spices and water until smooth.

Add dressing to the slaw and mix until completely coated.

Let the slaw sit for at least 20–30 minutes in the fridge before serving.
