14 oz. bag coleslaw mix

1 cupΒ Red Cabbage, shredded

1/2Β c.Β red pepperΒ diced

1Β 15 canΒ black beansΒ rinsed and drained

1/2Β c.Β grilled corn

1/2Β c.Β minced cilantro

1Β jalapenoΒ seeds removed and finely diced

For the Dressing:

1/2 cupΒ mayo

1Β tblΒ lime juice

1 tablespoonΒ water

1/2 teaspoonΒ chili powder

1 teaspoonΒ smoked paprika

1/4 teaspoon ground chipotle powder


Instructions

In a large bowl, add the coleslaw mix, shredded cabbage, red bell pepper, black beans, grilled corn, cilantro, and jalapeΓ±o. Toss everything together until well mixed.
