This rainbow vegetable crudité platter is packed full of colorful veggies and makes the most delicious edible centerpiece! Pair it with an easy dipping sauce for an appetizer adults and kids will love!

This raw vegetable platter is packed full of your farmer’s market favorites! Choose the freshest vegetables for the most delicious crudité platter.

Red Vegetables

Think red bell pepper, sliced julienne, cherry tomatoes, or red radishes. You can use mini bell peppers or slice a large red bell pepper julienne. Keep the cherry tomatoes whole, and cut the radishes into quarters.

Orange Vegetables

Orange bell peppers, orange carrots and orange heirloom cherry tomatoes are perfect for the orange vegetables on this crudité platter. Cut the carrots into sticks and bell peppers julienne. Keep the cherry tomatoes whole.

Yellow Vegetables

Yellow bell peppers, endive, yellow green beans, yellow cauliflower or yellow heirloom cherry tomatoes are great options for a beautiful crudités platter

Green Vegetables

Sliced cucumbers, snow peas, snap peas, broccoli, Romanesco, asparagus are great green vegetables for the green section on this crudité board. Asparagus can be served raw and unpeeled if they’re slender. Thicker stalks should be peeled from the top two-inches and below, then briefly blanched in boiling salted water and shocked in an ice bath while still tender-crisp.

Purple Vegetables

Purple carrots and purple cauliflower are the perfect addition to this colorful rainbow vegetable crudité platter. Cut the carrots into vegetable sticks and break the cauliflower into florets.

How to Assemble this vegetable platter

Start by choosing a large round platter like this one.

Place the small dip bowls in the middle of the platter, then present the different vegetables around the circumference of the board.

Then place the fresh veggies starting with the red sliced bell pepper. Place them vertically near the top of the board. Next to that, place the red cherry tomatoes.

Proceed to place the vegetables in the order of the rainbow: orange, yellow, green, purple. I like to alternate the vegetable sticks with the round cherries or florets for each color, as to create some visual interest on the board.

Once all the colors are in order and on the board, garnish with fresh herbs like basil or parsley or radishes with the stems still on. I also added some edible fresh florals right on the board in the blank spaces!

Ingredients

Scale

1 Red bell pepper, silced julienne

1 cup red cherry tomatoes

4 carrots, cut into sticks

1 cup orange cherry heirloom tomatoes

1 yellow bell pepper

1 cup romanesco florets

8 asparagus spears, trimmed

1 english cucumber, sliced

1 cup purple cauliflower florets


Instructions

Assemble board in rainbow color order.  Pair with your favorite dips
