Ingredients
16 oz can pumpkin
4 eggs
1 cup oil
1 tablespoon vanilla extract
1 cup granulated white sugar
1 cup brown sugar
2 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground allspice
pinch of ground nutmeg
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1/4 cup roasted pepitas
Instructions
In a large mixing bowl, whisk together pumpkin, eggs, oil, vanilla extract and sugars until combined Next add in the spices: ground cinnamon, ginger, allspice, and nutmeg.
Add all-purpose flour, baking powder, baking soda, and salt.
Gently whisk together until well combined.
Grease a 9×5 loaf pan. Pour prepared batter into loaf pan. Sprinkle roasted pepitas on top.
Place in a preheated oven at 350 degrees F. Bake for 55 minutes to an hour or until a toothpick comes out clean.
Let cool completely before slicing.
