1 pound baby red potatoes
2 bell peppers, cut julienne
8 oz. brussels sprouts, trimmed and halved
1 teaspoon EACH: dried thyme, dried oregano, and paprika
1/2 teaspoon onion powder
Fine sea salt and cracked pepper
1/4 cup olive oil separated
1 package chicken or turkey sausage
1 tablespoon minced garlic
1/3 cup freshly grated Parmesan cheese
Instructions
- Start by preheating the oven to 400F.
- Line a sheet pan with parchment paper or Silpat.
- Next chop the ingredients. Make sure each ingredient is chopped roughly the same size so that they bake evenly.
- Place the sausage slices and vegetables in a single layer on the sheet pan.
- Drizzle the olive oil over the sausage and veggies.
- Mix in the garlic powder, dried oregano, paprika, red pepper flakes, salt, and pepper together and sprinkle over the sausage and veggies.
- Bake for 20 mins or so. Halfway through, give the sheet pan a good toss to make sure that the sausages flip over.
- Serve over a bowl of cauliflower rice, white rice, couscous or quinoa.
