One Pan Sausage and Veggies

Ingredients

1 pound baby red potatoes 

2 bell peppers, cut julienne

8 oz. brussels sprouts, trimmed and halved

1 teaspoon EACH: dried thyme, dried oregano, and paprika

1/2 teaspoon onion powder

Fine sea salt and cracked pepper

1/4 cup olive oil separated

1 package chicken or turkey sausage 

1 tablespoon minced garlic

1/3 cup freshly grated Parmesan cheese


Instructions

  1. Start by preheating the oven to 400F.
  2. Line a sheet pan with parchment paper or Silpat.
  3. Next chop the ingredients. Make sure each ingredient is chopped roughly the same size so that they bake evenly.
  4. Place the sausage slices and vegetables in a single layer on the sheet pan.
  5. Drizzle the olive oil over the sausage and veggies.
  6. Mix in the garlic powder, dried oregano, paprika, red pepper flakes, salt, and pepper together and sprinkle over the sausage and veggies.
  7. Bake for 20 mins or so. Halfway through, give the sheet pan a good toss to make sure that the sausages flip over.
  8. Serve over a bowl of cauliflower rice, white rice, couscous or quinoa.
