One Pan Sausage and Veggies

This One-Pan Sausage and Veggies is a simple and tasty meal made with roasted Brussels sprouts, potatoes, bell peppers, and chicken sausage, all in the same pan. It’s a quick and delicious meal for the whole family!

As a new mama trying to balance working from home and child care, my dinners are all about quick and delicious convenience. I’m loving all the meals that require the least amount of dishes, so one pan meals are where it’s at! This one pan sausage and veggies is:

  • Easy and quick to make
  • Low carb, flavorful and so healthy!
  • Customizable! You can make it different every time you make it, by changing up the sausage or the vegetables.
  • Great for meal prep

How to make this quick and easy Sheet Pan Sausage and Vegetables

  • Line a sheet pan with parchment paper.
  • Place the sausage slices and vegetables in a single layer.
  • Toss with olive oil, spices, salt and pepper.
  • Bake in the oven till done! It’s that easy!

Cooking Tips

  • Always use a parchment paper liner (I love these pre-cut ones) or Silpat on your sheet pan for ease of clean and to avoid sticking.
  • Feel free to use any combination of sausages and vegetables for this recipe. Try and swap up the spices too to see what other wonderful flavors you can come up with.
  • You can serve this Sheet Pan Sausage and Veggies over a bowl of rice, quinoa, couscous or cauliflower rice for a more filling meal.
  • This recipe can be easily doubled to make extra for leftovers or to accommodate more people.
  • This is a great make-ahead recipe for meal prep. You can make a whole bunch and keep it in the refrigerator in an airtight container.

This one-pan sausage and veggies dish is quick and easy to make, loaded with nutritious ingredients, and SO tasty. It’s an easy dinner recipe that satisfies all those meat-and-potato eaters in a healthier, more nutritious way! We’re swapping fatty sausage for leaner chicken sausage, including crispy potatoes, while also adding some colorful veggies into the mix!

Variations on the one pan meal:

This dish is easily be customized to fit your family’s personal preferences or dietary restrictions. Below are some delicious options:

  • Sausage: We love Organic Spinach & Feta Dinner Sausage in this One-Pan Italian Sausage and Veggies dinner. Other delicious chicken sausage varieties include also used Italian-flavored chicken sausage, or this Chicken and Apple Sausage
  • Veggies: Use whatever veggies you have on hand! This is a great meal to use up those leftover ingredients in the fridge. Take note that root veggies typically take longer to cook, so you’ll want to cut them much smaller, so they’ll cook at the same rate as the other veggies. Some other options that would work great in One-Pan Sausage and Veggies are cauliflower, broccoli, zucchini, and cherry tomatoes.
  • Switch up the potatoes: The Dinner Fairy family loves baby red potatoes, but any thin-skin potato such as white potatoes or other yellow potatoes work well, as well as baby Yukon potatoes.
  • Add a crumbly cheese: This easy dinner dish is perfect as is, but a little cheese never hurt anyone! I love sprinkling some crumbled goat cheese or feta over the top when this one sheet meal comes out of the oven.

How do you make One-Pan Sausage and Veggies

  • Start by preheating the oven to 400F.
  • Line a sheet pan with parchment paper or Silpat.
  • Next chop the ingredients. While the oven warms up, get your ingredients chopped! Make sure each ingredient is chopped roughly the same size so that they bake evenly.
  • Place the sausage slices and vegetables in a single layer on the sheet pan.
  • Drizzle the olive oil over the sausage and veggies.
  • Mix in the garlic powder, dried oregano, paprika, red pepper flakes, salt, and pepper together and sprinkle over the sausage and veggies.
  • Bake for 20 mins or so. Half way through, give the sheet pan a good toss to make sure that the sausages flip over.
  • Serve over a bowl of cauliflower rice, white rice, couscous or quinoa.

Ingredients

1 pound baby red potatoes 

2 bell peppers, cut julienne

8 oz. brussels sprouts, trimmed and halved

1 teaspoon EACH: dried thyme, dried oregano, and paprika

1/2 teaspoon onion powder

Fine sea salt and cracked pepper

1/4 cup olive oil separated

1 package chicken or turkey sausage 

1 tablespoon minced garlic

1/3 cup freshly grated Parmesan cheese


Instructions

  1. Start by preheating the oven to 400F.
  2. Line a sheet pan with parchment paper or Silpat.
  3. Next chop the ingredients. Make sure each ingredient is chopped roughly the same size so that they bake evenly.
  4. Place the sausage slices and vegetables in a single layer on the sheet pan.
