Instant Pot Sausage and Gnocchi Soup

Instant Pot Sausage and Gnocchi Soup is so easy to prepare – the best for busy weeknights! This hearty soup is a hit with the whole family!

When the cold Chicago winter nights roll in I start to crave something warm and hearty for dinner! This Instant Pot Sausage and Gnocchi soup fits that description perfectly! A soup recipe like this is a staple in our meal plan all winter long!

Why should I cook Sausage and Gnocchi soup in an Instant Pot?

An Instant Pot does more than just cook food quickly. Because it uses pressure to cook, it concentrates all the different flavors in your soup.  You can really taste all the different spices and flavors in all of your ingredients when the soup is cooked in a pressure cooker. I love that you can saute the sausage and pressure cook the soup all in the same vessel, too! It makes this one-pot meal so conveniently delicious!

The whole soup took just 30 minutes to cook but the result was so rich and creamy that you would think it took all day to prepare!

What kind of tomato sauce should I use?

The key to making great soup is using the best ingredients!  When making this Spicy Sausage and Gnocchi soup, I only use the best tomatoes from Mutti tomatoes!  Their products are made from sun-ripened 100% Italian tomatoes from the Emilia Romagna region, and taste incredible right out of the can! Their tomato paste brings an incredible richness to the soup and the finely chopped tomatoes add the best texture and flavor of just-harvested tomatoes!  Making this soup is a delicious way to bring the whole family together!

How to make instant pot Sausage and Gnocchi Soup

  • Sauté: Use the sauté function of the IP to cook the sausage, onion, and garlic in olive oil. This step will release so much flavor from these ingredients resulting in a deeper and richer flavor of the dish. You can also put the rest of the seasonings and spices at this point.
  • Pressure-cook: After sautéing, add in the rest of the ingredients except for the cream. This is to prevent the curdling of the cream. Seal the Instant Pot, set, cook for a few minutes, then, perform the natural pressure release. This will take 5 more minutes before you can finally open the Instant Pot.
  • Serve: Ladle portions into bowls, garnish, then, serve while still warm.

Instant Pot Spicy Sausage and Gnocchi Soup

Ingredients

1 lb spicy Italian sausage

½ onion diced

3 cloves garlic, minced 

2 tsp Italian seasoning

1 tsp salt

1/2 cup chicken stock

2 cans of chopped Mutti tomatoes

24.5 oz Mutti tomato puree.

1 tablespoon Mutti tomato paste

1 lb frozen gnocchi

½ cup cream

½ cup grated parmesan, plus more for garnish

2 cups fresh spinach

½ cup chopped fresh basil


Instructions

Remove sausage casings from 1 lb spicy italian sausage. Add to instant pot on browning mode.  Cook until browned. 

Add ½ onion diced, 3 cloves garlic and stir. 

Add 2 tsp Italian seasoning, 1 tsp salt, 1/2 cup chicken stock, 2 cans of chopped Mutti tomatoes and 24.5 oz Mutti tomato puree.

Add 1 tbl Mutti tomato paste and 1 lb frozen gnocchi and press down on the gnocchi slightly until they’re just covered by the sauce.

Place lid on Instant Pot and move to the sealed position.  Cook on high for 1 minute.  Do a quick release and add ½ cup cream, ½ cup grated parmesan and stir to combine. 

Add 2 cups fresh spinach and ½ cup chopped fresh basil and stir until spinach has wilted.  Plate and serve with grated parmesan!

    So easy! Loved this soup. I had to use more broth though because there wasn’t enough liquid and my Instapot started screaming at me that the food was burning. 🤦🏻‍♀️ Thankfully adding more liquid seemed to solve the problem.
