Description

Instant Pot Feijoada is a traditional Brazilian black bean and pork stew that is the ultimate comfort food! Serve it with smoked sausage and rice for a delicious and hearty dinner! 


Ingredients

Scale
  • 1 pound of black beans
  • 3 or 4 strips of thick-cut bacon
  • 1 large yellow or white onion
  • 3 or 4 cloves of garlic
  • 1 smoked pork shank
  • Salt and pepper and red pepper flakes to taste

Instructions

Instant Pot Instructions:

  1. Put the Instant Pot browning or sauté mode, and add the bacon to the pot. Sauté for 3-4 minutes and add the onion and garlic. Cook for another two minutes before adding the pork hock.
  2. Add the dried beans, salt and 5 cups of water and place the lid on the Instant Pot. Lock the lid and cook on high pressure for 40 minutes. Then let the pressure come down naturally, about 20 minutes.
  3. Carefully remove the lid on the pressure cooker Taste the beans for seasoning. Serve over rice, garnished with parsley!

Stovetop Instructions:

  1. Soak the beans overnight in water.
  2. Boil the beans over low heat with the pork hock in about 4 to 5 cups of water, until beans are splitting and tender (an hour or more).
  3. Chop bacon and onions in a sauté in a pan until browned. Crush garlic and brown with onions and bacon, about 2 minutes. Add this mixture to the beans.
  4. Stir and then simmer on low heat.
  5. Serve over rice or collard greens.

Notes

If stored in an airtight container, the stew will keep in the refrigerator for up to a week, or in the freezer for up to three months.
