If there’s one thing I love when entertaining, it’s serving something that looks impressive but is secretly effortless to make. First it was the charcuterie board, and now the next “charcuterie board”! Butter boards have now become one of my favorite entertaining trends. Butter boards were a huge viral trend a few years ago, thanks to TikTok users, but they’ve stuck around because they’re beautiful, interactive, and incredibly customizable. For Saint Patrick’s Day, I like to lean into vibrant green flavors and fresh herbs, which is how this Saint Patrick’s Day Butter Board with pesto, pistachios, honey, and brioche buns came to life.

This board is inspired by the rich Irish butter we all know and love. I start with creamy Kerrygold butter, swirl in herby pesto, drizzle it with honey, and sprinkle on crunchy pistachios, fresh basil, edible flowers, and flaky sea salt. Finally, I serve it alongside soft brioche buns, which are perfect for tearing apart and dipping into the flavorful butter.

Even better, it’s the kind of appetizer guests immediately gather around. Just set out the warm brioche buns and watch the butter board disappear.

Ingredients

  • 1 pound salted Kerrygold butter, softened
  • 5 tablespoons pesto
  • 1/4 cup pistachios, chopped
  • 2 tablespoons honey
  • Edible flowers
  • Flaky salt
  • Fresh basil leaves
  • Brioche buns, for serving (lightly toasted if desired)

Why We Use Each Ingredient

Unlike traditional charcuterie boards, butter boards are essentially a deconstructed compound butter board. Every component here plays an important role in creating a balanced bite.

Kerrygold Butter

Butter is the star of this board, so quality really matters. Kerrygold butter is rich, creamy, and slightly grassy thanks to milk from grass-fed Irish cows. That deep flavor makes it perfect for a butter board because it provides a luxurious base for all the toppings.  You can use salted or unsalted butter.  Start with soft butter before adding the pesto.  Howmuch butter you use depends on how many people you’re feeding.  To make this shamrock, I used one pound or four sticks of butter.  You can adjust how much butter you need accordingly.

Pesto

Pesto adds vibrant color and bright herbal flavor. The basil, garlic, and olive oil bring a fresh contrast to the richness of the butter. Plus, the green color instantly makes the board feel festive for Saint Patrick’s Day.

Pistachios

Chopped pistachios add texture and a subtle nutty flavor. They also reinforce the green theme while giving guests a satisfying crunch in every bite.

Honey

A drizzle of honey balances the savory ingredients with a touch of sweetness. That contrast makes the butter board feel more complex and keeps guests coming back for another swipe.

Edible Flowers

Edible flowers add a whimsical, celebratory feel. When you’re entertaining, visual appeal matters just as much as flavor, and these make the board look like a little spring garden.

Flaky Sea Salt

I often lightly toast them so the edges are warm and golden while the centers remain pillowy soft.  If you’re a fan of crusty bread, you could use that too! 

How to Make a Saint Patrick’s Day Butter Board

Step 1: Soften the butter
Let the butter sit at room temperature for about 20–30 minutes until it becomes soft and spreadable. Add the pesto and stir to combine.

Step 2: Spread the butter
Using a butter knife, back of a spoon or small offset spatula, spread the butter making a shamrock shape like the images below

Step 3: Add the toppings
Sprinkle the chopped pistachios over the board and drizzle the honey across the surface.

Step 4: Garnish
Finish with edible flowers, fresh basil leaves, lemon zest and a sprinkle of flaky sea salt and black pepper if desired.

Step 5: Serve
Arrange the brioche buns and other pieces of bread around the board. Tear a piece of bread in half so guests can easily scoop up the butter.

Storage Instructions

• Allow the butter to sit at room temperature for 15 minutes before serving again so it softens
