Choose freestone peaches rather than clingstone or cling peaches. Freestone or cling-free peaches refer to fruit where the flesh is not attached to the pit. When you cut or bite into these peaches, you can reach in and easily remove the pit, making them a pleasure to eat out of hand and great for cooking, baking, and canning, since they are easy to prep.
Olive Oil

Depending on where you live will also affect the peak readiness of peaches at those local farmers markets. In Illinois where I live, peak peach season lasts from June until September.

Now, if you go to your local supermarket and can only find rock hard peaches, don’t worry! Most fruits are picked before they’re completely ripened so they’re easier to transport. Fortunately, when you put those peaches on the grill, the heat intensifies the natural sugars in peaches — or any underripe fruit for that matter — as well as softens the flesh as it cooks. In the end, you’ll get a slightly caramelized, and soft peach! Perfection!

Step by Step Instructions to Making Grilled Peaches with Honey Mascarpone
- Prepare the Peaches
- Preheat your grill to medium-high heat (about 375-400°F).
- Brush the cut sides of the peaches with olive oil or melted butter. This prevents sticking and helps them caramelize beautifully.
- If you like a hint of spice, sprinkle a little cinnamon over the peaches for extra depth of flavor.
- 2. Grill the Peaches
- Place the peaches cut-side down on the hot grill (or indoor grill pan). Close the lid and cook for 3-5 minutes, until they have nice grill marks and are slightly softened.

Ingredients
1/2 tsp vanilla bean sugar
1/4 tsp cinnamon
Pinch of cloves
Pinch of allspice
2 peaches, halved and pitted
Mascarpone cream:
1/4 cup greek yogurt
1/4 cup mascarpone cheese
1 tsp honey
1 tsp sugar
1/4 tsp cinnamon
pinch nutmeg
1 tsp vanilla
Instructions
Mix together vanilla bean sugar, cinnamon, cloves, and allspice in a bowl and set aside.
Make the mascarpone cream by combining greek yogurt, vanilla, mascarpone cheese, honey, cinnamon and sugar in a bowl and stir to combine.
Preheat the gas grill to medium-high heat on half the grill and low heat on the other half of the grill.
Brush the cut sides of the peaches with oil.
Place peaches on the grill, cut side down over direct heat until the fruit has developed grill marks, and started to soften about 4 to 5 minutes.
Brush the tops of the peaches with oil, turn over and move to the indirect heat side of the grill to continue cooking, another 4 to 5 minutes.
Serve peaches with a spoonful of mascarpone cream and a sprinkle of the spice mix.
