Almond butter

How to assemble yogurt parfaits
Start by creating your blueberry syrup or blueberry sauce.
Then mix Greek yogurt, almond butter, honey, and cinnamon until well combined.
Then build your parfait! Layer vanilla greek yogurt on the bottom of the mason jar, followed by the next layer of the berry syrup, granola, and almond butter yogurt mixture, more granola and then fresh fruit!
Store in the fridge until ready to enjoy!

Ingredients
For the berry syrup:
1 1/2 cups fresh blueberries
1/2 tsp grated lemon rind
1/2 cup water
1/4 cup sugar
2 tablespoons cornstarch dissolved into 2 tablespoons water
1/4 teaspoon vanilla
For the almond butter yogurt
- 1 cup greek yogurt
- 3 tbl almond butter
- 1 tbl honey
- 1 1/2 tsp cinnamon
For the parfait
1 cup vanilla greek yogurt
1 cup almond butter yogurt
3/4 cup fresh berries
6 tablespoons Berry Syrup
1/2 cup granola
Instructions
For the Syrup:
Place blueberries and blackberries in a small saucepan. Cover with water and add sugar and vanilla. Heat over medium-high heat until mixture comes to a low boil and berries just start to break apart.
Add dissolved cornstarch to saucepan and bring mixture to a rolling boil. Turn heat down and simmer on low heat for 2-3 minutes, or until sauce reaches desired consistency. Add water, one tablespoon at a time, if the sauce gets too thick. Add lemon rind.
Remove from heat. Puree in a blender if desired, or leave chunky. Add remaining blueberries and stir gently. Serve warm or cold.
For the Yogurt:
Add all ingredients for the almond butter yogurt to a bowl and mix to combine.
Assembly:
Assemble breakfast parfait with plain yogurt, almond butter yogurt, granola, berry syrup, and fresh fruit
