Well, suddenly you’re not just hydrating… you’re on a beach somewhere. 

This Coconut Water Mocktail is creamy, citrusy, tropical, and completely alcohol-free. It’s the kind of drink I love serving at backyard dinners, baby showers, or even alongside a spicy bowl dinner (hello, balance!). This mocktail is best enjoyed immediately after shaking, since the coconut milk can separate over time.

However, if needed:

  • You can store the mixed (but unshaken) base in the refrigerator for up to 24 hours.
  • Shake again vigorously before serving to re-emulsify.

Because of the coconut milk, I don’t recommend storing leftovers in a glass with ice—dilution and separation will affect the texture.

3. Shake vigorously for 15–20 seconds until fully chilled and creamy.

Notes

Full-fat coconut milk creates the creamiest texture and best flavor balance.

Shake thoroughly. Coconut milk needs agitation to fully incorporate.

If the coconut milk has separated in the can, whisk or stir it until smooth and fully

combined before using.

Fresh lime juice significantly brightens the drink and balances sweetness.
