Ingredients

Two 8-ounce wheels of Brie cheese, rind removed and cut into cubes (see notes)
2 tablespoons heavy cream
¼ cup mixed chopped fresh herbs (I used parsley, rosemary, and thyme)
2 tablespoons olive oil, divided
1 tablespoon minced garlic
Sea salt
Fresh cracked black pepper
Crostini, crackers, and fresh fruit for serving
Instructions
- Soften the brie by allowing it to sit at room temperature for 30-60 minutes after the rind is removed.
- Place the softened brie into the bowl of a food processor, and turn on low.
- When the brie has started to whip into a smooth consistency, add the heavy cream.
- Continue processing for 4-5 minutes, scraping the sides of the bowl down every minute or two, until the brie is whipped and creamy.
- Spread the whipped brie into a serving dish, swirling gently to create ridges.
- Drizzle 1-2 teaspoons of olive oil over the brie.
- In a small bowl, stir together the fresh herbs, remaining olive oil, and minced garlic.
- Spoon the herb & garlic mixture over the top of the brie.
- Garnish with sea salt & fresh cracked black pepper to taste.
- Serve with crostini, crackers, and fresh fruit
