For me, asparagus goat cheese quiche always feels like the official welcome to spring—even when Chicago is still deciding whether it’s winter or not. The first time I made this, I had picked up a bundle of asparagus at the store because it looked too fresh to pass up. Pairing it with creamy goat cheese and sweet shallots turned into one of those recipes that immediately became a repeat favorite.

This quiche is rich but balanced, elegant yet approachable, and just as perfect for brunch with friends as it is for a quiet weekday breakfast at your kitchen counter.

How to Make an Asparagus and Goat Cheese Quiche

First, heat oven to 375°F. Place your oven rack in the middle position.

Roll your pie dough into a 12-inch circle, then gently lift and press it into a 9-inch pie plate or tart pan with a removable bottom. Trim the excess, fold the edges under, and crimp. Prick the bottom of the crust and sides with a fork, then place the crust in the refrigerator while you prepare the filling. Keeping the crust cold is key—it helps maintain that flaky texture.

Meanwhile, melt the butter in a large skillet over medium heat. Add the diced shallots and sauté for 3–4 minutes until softened and fragrant. Then add the asparagus and cook for another 3–4 minutes. The asparagus won’t be fully cooked yet, and that’s exactly what you want. Finally, add the garlic and sauté for 1 more minute, then remove from heat and let the mixture cool.

In a large bowl, whisk together the eggs, milk, cream, salt, and pepper until smooth and fully combined. This mixture will become the creamy custard filling.

Next, spread the asparagus mixture evenly over the chilled pie crust. Sprinkle the crumbled goat cheese over the vegetables, then slowly pour egg mixture on top.

Bake for 40–45 minutes in the preheated oven, tenting loosely with foil after about 25–30 minutes if the crust is browning too quickly. The quiche is done when the center is set but still has a slight jiggle and the top is lightly golden.

Remove the quiche from the oven and let it rest on a wire cooling rack for at least 15–20 minutes before slicing. This resting time allows the custard to fully set and makes slicing much easier.
