Easy Fruit Pizza with Brownie Crust

Description

This easy fruit pizza is simply stunning and so delicious! A decadent brownie crust with a mascarpone cheese frosting topped with fresh fruit. A showstopping perfect summer dessert!

 


Ingredients

1 Boxed brownie mix plus boxed brownie ingredients

2 sticks unsalted butter

3 cups powdered sugar

2 tsp vanilla extract

1/2 cup blueberries

1/4 cup blackberries

1/4 cup cherries, pitted and sliced in half

1/4 cup watermelon stars


Instructions

Prepare brownie batter in a large mixing bowl according to the box instructions and spray an 11″ tart pan with removable bottom with non-stick cooking spray. If you’re using a round pizza pan or something else without a removable bottom, place a parchment paper round at the bottom for easy removal of the pizza.

Pour brownie batter into a prepared pan and bake at 350 F for 22-25 minutes. Do not overbake.

While the crust cools, prepare buttercream.  In a separate bowl combine room temperature butter, powdered sugar and vanilla extract.  Beat on high for 5 minutes with an electric mixer or stand mixer.

Remove brownie from pan and spread buttercream in a thin layer over the cooled brownie crust.

Place the fruit toppings over the buttercream layer. Slice and serve
