Ingredients

1 (32 oz) bag frozen tater tots

1 lb ground beef 

1 shallot, diced

2 cloves garlic, minced

1 (10.5 oz) can condensed cream of mushroom soup

½ cup sour cream, plus more for topping

½ cup milk

1 cup shredded cheddar cheese, divided

1 cup shredded mozzarella cheese, divided

½ teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon black pepper

½ teaspoon salt

6 slices cooked bacon, crumbled

3 green onions, sliced


Instructions

  1. Preheat & Prepare:
    Preheat your oven to 375°F (190°C). Prepare your cast iron pan or grease a 9×13-inch baking dish.

  2. Cook the Meat:
    In your cast iron pan or skillet over medium heat, cook the ground beef with diced shallot until browned. Drain excess grease, then stir in minced garlic and cook for another minute.

  3. Mix the Sauce:
    In a large bowl, combine cheddar cheese soup, sour cream, milk, 1 cup of shredded cheese, smoked paprika, garlic powder, salt, and black pepper. Stir in the cooked beef mixture until well combined.

  4. Assemble the Casserole:
    Spread the beef mixture evenly into the prepared baking dish. Arrange tater tots in a single layer on top.

  5. Bake:
    Bake uncovered for 30 minutes. Remove from the oven, sprinkle the remaining 1 cup of shredded cheese and crumbled bacon over the tater tots. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Garnish & Serve:
Let the casserole cool for a few minutes, then drizzle with some extra sour cream and sprinkle with sliced green onions.
