Creamy Rose Sangria Popsicles

1 bottle Rosé wine
2 cups strawberries, sliced and divided in 1/2 
1/3 cup triple sec
3 mint sprigs, chopped
2 cups sparkling water
1/4 cup sugar
1/4 cup Greek yogurt


Reserve half the strawberries for later.  Blend the rest of the ingredients until smooth. Add the reserved strawberries to popsicle molds. Pour the blended Rosé mixture unto each prepared mold.

If you’re using molds that require a popsicle stick to be added, freeze the pops until partially frozen (approximately two hours), slide the stick gently into the center of the pop (it should stand on its own), and return it to the freezer for another three hours or until completely frozen.
