    Bring a large pot of generously salted water to a boil. Cook the pasta according to package directions, stopping about 1 minute before fully cooked so it remains al dente. Reserve 1 cup of pasta water before draining.

  • Cook the Ham
    Heat olive oil in a large skillet over medium heat. Add the diced ham or pancetta and cook for 5–6 minutes, stirring occasionally, until golden.

  • Add Garlic
    Stir in the garlic and cook for about 30 seconds, moving it constantly to prevent burning.

  • Add Peas
    Add the frozen peas and toss for another 30 seconds until warmed through.

  • Make the Sauce
    Pour in the cream and bring to a very gentle simmer. Lower the heat if necessary — the sauce should never boil aggressively.

  • Add Parmesan
    Stir in the Parmesan in 2–3 additions, allowing it to fully melt between each addition.

  • Season
    Add the black pepper and lemon juice, stirring to combine.

  • Combine Pasta & Sauce
    Add the drained pasta and ½ cup reserved pasta water to the skillet. Toss well and let simmer gently for 1–2 minutes until the sauce thickens slightly. Add more pasta water if needed to loosen.

  • Adjust & Finish
    Taste and season with salt and additional pepper if needed. Stir in fresh arugula if using.
