How to Make Elote Nachos

  1. Make the corn topping:
    If using fresh or thawed frozen corn, char it in a dry skillet over high heat until slightly blackened. Set aside.
    In a small bowl, stir together sour cream, mayo, olive oil, chili powder, garlic powder, lime juice, lime zest, salt and pepper to taste. 
  2. Build the nachos:
    Spread half of the tortilla chips in a single layer out on a large baking sheet pan. Then top with half the cheese, half the roasted corn. Repeat layers.
  3. Bake:
    Bake at 400Β°F for 5-7 minutes, or until the cheese is fully melted and bubbling.
  4. Top it off:
    Remove from oven and drizzle with elote sauce. Sprinkle Cotija, red onion, and jalapeΓ±o. Garnish with a drizzle of hot sauce, Tajin, extra cotija, cilantro, and a few squeezes of lime.

Ingredients

For the nachos:

1 bag tortilla chips (or lime-flavored chips)

1Β½ cups Pepper Jack Cheese

1 cup fire-roasted corn (fresh, canned, or frozen)

Β½ cup Cotija cheese, crumbled

1 small jalapeΓ±o, thinly diced

ΒΌ cup red onion, finely diced

For the elote-style topping:

Β½ cup sour cream or Mexican crema

ΒΌ cup mayonnaise

1 tablespoon olive oil

1 teaspoon chili powder

Β½ teaspoon garlic powder

3 tablespoon lime juice

Zest of 1 lime

Salt to taste

Pepper to taste

Extras:

Lime wedges

Pickled onionsΒ 

Chopped Cilantro

Jalapeno slices

TajΓ­n or chili-lime seasoning for garnish

Black Beans

Optional protein such as grilled chicken or shredded beefΒ 


Instructions

1. Preheat & Char Corn:

If using fresh or thawed frozen corn, char it in a dry skillet over high heat until slightly blackened. Set aside.

2. Mix Elote Sauce:

In a small bowl, stir together sour cream, mayo, olive oil, chili powder, garlic powder, lime juice, lime zest, salt and pepper to taste.Β 

4. Assemble Nachos:

  • Preheat oven to 400Β°F (200Β°C).

  • On a baking sheet, layer half the chips, half the cheese, half the roasted corn. Repeat layers.

  • Bake for 5-7 minutes until cheese is bubbly and melted.

5. Top It Off:

Remove from oven and drizzle with elote sauce. Sprinkle Cotija, red onion, and jalapeΓ±o.

6. Finishing touches:

Squeeze fresh lime over the whole tray and dust with Tajin or chili-lime seasoning and chopped cilantro.Β
