Ingredients

2 ears fresh corn, husked 1 ½ cups fresh pineapple, diced 1 small red bell pepper, finely chopped 1 small jalapeño, seeded & finely diced ¼ cup red onion, finely diced ¼ cup fresh cilantro, chopped Zest & juice of 1 lime 1 tbsp honey ½ tsp salt ½ tsp chili flakes (optional, for extra heat)


Instructions

Char the Corn & Pineapple: Heat a dry skillet or grill pan over medium-high heat. Add whole corn ears and pineapple chunks, turning occasionally, until lightly charred (about 5-7 minutes). Let cool slightly.

Cut the corn off the cob and dice the pineapple into small pieces.

Mix the Salsa: In a large bowl, combine charred corn, pineapple, red bell pepper, jalapeño, red onion, and cilantro.Add lime zest, lime juice, honey, salt, and chili flakes (if using). Toss well to combine.

 

Let It Marinate: Cover and refrigerate for at least 30 minutes to allow flavors to meld.
