What’s the difference between limes and key limes?

The Key lime is usually picked while it is still green, but when it ripens, it turns a yellow color. The Key lime is smaller, has more seeds, a higher acidity, stronger aroma, and a thinner rind than the Persian lime. The Key lime is known for its unique flavor compared with other limes. Key limes are grown in Mexico, Central America and South America. They are also grown in Texas, Florida, and California.

Can I substitute regular limes for key limes?

If you can’t locate any key limes in your area, you can substitute equal amounts of the standard, grocery store Persian limes. It takes about 5 key limes to equal the juice you will get from 1 regular lime.
