Bananas Foster Nutella Crepes

Bananas Foster Nutella Crêpes makes a deliciously decadent breakfast or sinful dessert! Delicate crêpes stuffed with rich Nutella topped with sauteed bananas that are sure to be a show stopper on your table!  

Crêpes are a favorite at the Dinner Fairy household.  We save them for lazy Sunday mornings when they can be enjoyed with a nice cup of french pressed coffee. Today we’re putting a hazelnutty twist on the traditional crêpe!  By adding a little Nutella and then topping them with my favorite, caramelized bananas (with a touch of Kahlúa), these bananas foster Nutella crêpes  are sure to be a hit with the whole family!

What is the difference between Crêpes and pancakes?

Although Crêpes and pancakes look very similar, this French looking pancake does not have a key ingredient – a leavener! Crêpes don’t have baking powder nor do they have baking soda in them.  Pancakes do, so they rise taller than Crêpes, which lay thin and flat.

Crêpes are some of my favorite things to make because they can be filled with pretty much anything you choose! Sweet, savory, you name it!  Today I had a bit of a sweet tooth, so I filled my Crêpes with decadent nutella, a hazelnut spread, and topped them with caramelized bananas.  I am a huge fan of bananas foster, so I wanted to add a bit of booze while the bananas were cooking (such a good choice, I might add) and sprinkled some mini chocolate chips over top as well. The great thing about these Crêpes is that they’re so easy and quick to make!  Additionally, if you’re having guests over, you can prepare the Crêpes ahead of time and just top with the sauteed bananas when everyone is hungry!  You can even prep the bananas ahead and reheat them right before.  The Crêpes can be room temp or even chilled.

How do you know when to flip a crêpe?

After scooping a ladle full of batter and swirling it around in a hot pan to create an even layer (as shown in the video below) you’ll notice the edges of the crêpe begin to brown.  When the crêpe has browned slightly on the bottom, carefully slide a spatula underneath it and flip. Cook the second side just for 10 seconds or so, just until the batter sets. 
 

How do I caramelize bananas?

Caramelized bananas are one of my favorite treats ever!  Bananas are naturally sweet, but caramelizing them takes their sweetness to a whole other level! You can use them to top ice cream, french toast, or in this case, Nutella crêpes! My favorite way to prepare caramelized bananas is in a sauté pan.

You’ll start by heating butter in a pan over medium heat.  Once the butter has melted, add the bananas saute for a minute.  Add brown sugar and start stirring.  The sugar will melt and begin to coat the bananas.  Keep them moving until the sugar melts complete and the sauce starts to thicken. This should take about 2-3 minutes.

When the sauce has thickened, remove from pan and set aside until you’re ready to pour them over the crepes. Reheat if necessary in the microwave.  If you’re reheating on the stove top, add some more butter if the sauce has thickened too much.

Plate the crepes on a large platter and top with bananas.  Top with mini chocolate chips, additional Nutella if desired, and a little whipped cream!

Ingredients

Scale
  • 1 cup all purpose flour
  • 2 eggs
  • 3/4 cup milk
  • 1/2 cup water
  • Nutella
  • 3 bananas
  • 2 tbl butter
  • 2 tbl brown sugar
  • 2 tbl Kahlua
  • Mini chocolate chips
  • Whipped cream

Instructions

Combine flour, eggs, milk and water in a bowl.  Whisk to combine until there are no lumps.

Heat a 9″ saute pan over medium heat.  Brush pan with oil and add a ladle (1/4 cup) of batter to the pan while swirling to evenly coat the bottom of the pan.  Flip once the edges of the crepe are slightly brown.  Cook for 10 seconds to set the batter on the other side.

Repeat with the rest of the batter

Heat butter in a pan over medium heat.  Once the butter has melted, add the bananas saute for a minute.

Add brown sugar and start stirring.  The sugar will melt and begin to coat the bananas.  Keep them moving until the sugar melts complete and the sauce starts to thicken. This should take about 2-3 minutes.  Add the Kahlua and cook for another minute.  Remove from heat and set aside. 

Spread 1 tbl nutella on each crepe, and fold in half and half again to create a triangle.  Place on platter and top with bananas, chocolate chips, additional nutella and whipped cream.  Serve.
