How to Make Nutella Crepes with Bananas

First, combine the flour, eggs, milk, and water in a large bowl. Whisk until the crepe batter is completely smooth and free of lumps. The batter should be thin—closer to heavy cream than pancake batter. This is key for delicate crepes.

Next, heat a 9-inch sauté pan or crêpe pan over medium heat. Lightly brush the bottom of the pan

with oil. Once the pan is hot, add about ¼ cup of batter to the center of the pan and immediately swirl it in a circular motion around to evenly coat the bottom.

Cook until the edges start to get golden brown and lift away from the pan. Flip the crepe and cook the second side for about 10 seconds, just until set. Transfer to a plate and repeat with the remaining batter, stacking the crepes as you go.

While the crepes rest, it’s time for the bananas. Heat the butter in a pan over medium heat. Once melted, add the banana slices and sauté for about a minute.

Then, sprinkle in the brown sugar and stir gently. The sugar will melt, coat the bananas, and start to thicken into a glossy sauce after about 2–3 minutes. Add the Kahlua and cook for one more minute, then remove from heat.

To assemble, spread about 1 tablespoon of Nutella over each crepe. Fold the crepe in half, then in half again to form a triangle. When the sauce has thickened, remove from pan and set aside until you’re ready to pour them over the crepes. Reheat if necessary in the microwave.  If you’re reheating on the stove top, add some more butter if the sauce has thickened too much.

Ingredients

Scale
  • 1 cup all purpose flour
  • 2 eggs
  • 3/4 cup milk
  • 1/2 cup water
  • Nutella
  • 3 bananas
  • 2 tbl butter
  • 2 tbl brown sugar
  • 2 tbl Kahlua
  • Mini chocolate chips
  • Whipped cream


Instructions

Combine flour, eggs, milk and water in a bowl.  Whisk to combine until there are no lumps.

Heat a 9″ saute pan over medium heat.  Brush pan with oil and add a ladle (1/4 cup) of batter to the pan while swirling to evenly coat the bottom of the pan.  Flip once the edges of the crepe are slightly brown.  Cook for 10 seconds to set the batter on the other side.

Repeat with the rest of the batter

Heat butter in a pan over medium heat.  Once the butter has melted, add the bananas saute for a minute.

Add brown sugar and start stirring.  The sugar will melt and begin to coat the bananas.  Keep them moving until the sugar melts complete and the sauce starts to thicken. This should take about 2-3 minutes.  Add the Kahlua and cook for another minute.  Remove from heat and set aside. 

Spread 1 tbl nutella on each crepe, and fold in half and half again to create a triangle.  Place on platter and top with bananas, chocolate chips, additional nutella and whipped cream.  Serve.
