Ricotta Tartines

This summer, perfect your picnic game with these colorful tartines!  These open faced sandwiches are chic and delicious, and will have you craving them all year round! 

I feel like no Dinner Fairy party is complete without some tartines.   If you’re not familiar with the word, a tartine is a french word for an open sandwich.  I’m a huge sandwich fan, so in my opinion, a crusty bread with a delicious topping is always good in my book.  As an added bonus, they are gorgeous! These little bites will be sure to impress your guests at your next party.

The best part of all of this? You can use whatever toppings you’d like.  You really can’t go wrong!

Start out with some crusty bread or a french baguette. Slice on a diagonal and toast at 350° until they’re golden brown.   When they’re nice and toasty (see what I did there? hehe) , remove from the oven and brush with extra virgin olive oil.  Spread on a heaping spoonful of ricotta, and top with your favorites.What you need:
1 baguette, sliced
1 cup fresh ricotta cheese
1/2 cup strawberries, sliced
1 cucumber, sliced
Fresh Dill sprigs
1 cup baby heirloom tomatoes, roasted for one hour
1 oz smoked salmon
1 oz capers
1/2 cup pistachios
2 tbl honey

From Top to bottom:
Smoked Salmon, fresh dill and capers
Roasted Heirloom tomatoes and garlic
Honey and chopped pistachios
Blueberries and honey
Strawberries
Thinly sliced cucumber and fresh dill
