Holiday Spice Cookies

Happy 2017!! As a new year’s resolution, I vowed to share more of my baking recipes with you! So we are starting with these melt-in-your-mouth spice cookies.  My mom and I made these over Christmas and I haven’t been able to stop eating them since! I keep some dough in my freezer at home and Allison and I bake a couple each night.  Who can say no to freshly baked cookies? Not me!

Holiday Spice Cookies

Serves 24 cookies


2 1/4 cup all purpose flour, sifted
2 tsp baking soda
1 tsp allspice
1 tsp ginger
1 1/2 tsp cinnamon
1 tsp salt
3/4 cup unsalted butter, softened
1 1/2 cup white sugar
1 egg
3/4 cup molasses


Heat your oven to 350 degrees.  Line a baking sheet with parchment paper or a Silpat.
Beat together butter and sugar in a large bowl with an electric mixer until the butter is light in color (about one minute).  Add the egg and molasses and mix well to combine.
Sift together the flour, baking soda, spices and salt in a separate bowl. Slowly add the dry ingredients to the wet and mix until just combined.  Using a large spoon or small cookie scoop, roll dough into balls about 1" in diameter.

Arrange on a baking sheet, spacing them about 2" apart.
Bake at 350 for 9 minutes and let cool.
